How to Make Tocino

Tocino is well liked by children and adults alike because of its sweet blend. It is very easy to make and only involves a few ingredients.

This tocino recipe can be used to produce your own tocino, which you can sell to your neighbors and friends.

1 kg. Pork (Preferably from shoulder or leg or any portion with fat and should be without bones)

Curing Mix
1 Tbsp. Salt, refined
1/2 tsp. Curing salt (Prague powder)
1 tsp. Phosphate (Accord powder)
1/4 cup chilled water (to dissolve phosphate)

3/4 - 1 cup refined sugar
1/2 cup Pineapple juice
2 Tbsp. Anisado wine
2 Tbsp. Chopped fresh garlic
1/4 tsp. Monosodium Glutamate (Vetsin) (Optional)
1/2 tsp. Meat enhancer
Food color (as desired)


1. Cut the meat into a quarter of an inch (1/4 in.) thick slices. Remove bones if you bought it with bones.
2. Dissolve phosphate in 1/4 cup water then add the remaining curing ingredients. Mix meat with the curing mix. Mix thoroughly.
3. Add the rest of the ingredients and mix again.
4. Cure at room temperature for about 8 - 10 hours or refrigerate (do not freeze) for 1 to 2 days.
5. Pack in polyethylene bag or vacuum pack.
6. Store in freezer.
