How to Make Banana Pastillas

Here is a very simple recipe for banana pastillas, which you sell to your officemates or your local sari-sari stores for added income. The main raw material, banana, is available all-year-round so you don't have to worry about it getting out of stock.


Ripe saba or cavendish (unpeeled)
Sugar (refined)

1. For every 2 cups of mashed banana, add ½ cup of water.
2. For every kilo of mashed banana (about 5 cups), add 300 grams (2 ¼ cups) sugar.

1. Boil ripe bananas for about 7 to 10 minutes.

2. Remove from water and let cool.

3. Peel and slice to small pieces.

4. Add sugar and mash with a potato masher or with fork, making sure that it is evenly mixed. Add water and mix again.

5. Cook over low heat, stirring constantly.

6. Cook until mixture does not stick to the pan or has a consistency of a dough. Let it cool.

7. Sprinkle small amounts of refined sugar on clean kneading board.

8. Flatten cooked mixture on cutting board with rolling pin until 1/2 inch thick.

9. Cut into 2-1/2″x1/2″ pieces.

10. Roll pieces in sugar. Dust off excess sugar if you want to.

11. Wrap with wax paper. Pack in plastic bags and can be sold for additional income.
